Crock Pot Asian Pork and Asparagus

How many times have you come home wishing dinner was ready?  Using the crock pot is a great way to have an awesome meal waiting for you when you get home.  I’ll have to say that we joke about cooking meals in the crock pot.  I have about a 50% chance of having a meal turn out great or not so great.  Luckily, even when it has turned not so great it was still edible.  My biggest problem was either the meat was too dry or not flavorful enough.

I came across this Asian Pork crockpot recipe while browsing “Holly Would If She Could” blog.  Right away I knew I had to try it. The recipe had two of my favorite ingredients: pork and soy sauce.  The recipe itself was pretty easy.  I followed her suggestions for alternative ingredients.  I used peanut butter instead of almond butter.  I used tamari sauce instead of soy sauce.  I was skeptical at the amount of liquid in the crockpot, but decided to follow the instructions.  Good thing too, because it turned out perfect.  I would not change a thing.  The pork came out very juicy and perfectly seasoned.

For a side dish, I pan seared asparagus with olive oil, lemon juice, fresh garlic and salt and pepper.  After cutting about an inch off the bottom of each stalk, I put them in the pan over medium heat with a drizzle of olive oil.  Sprinkle salt and pepper, add the minced garlic and squeeze half of a lemon.  Place the other half of the lemon face down in the pan while the asparagus cooks.  I like my asparagus crispy, so I keep an eye on it until it turns bright green.  If you like yours tender, then leave it in the pan longer.  Just remember that asparagus will continue to cook for a few minutes after it has been removed from the heat.

Gardening: Gaillardia, Gazania and Pentas

To my surprise the annual greenhouse is packed full today!  We just got a shipment from one of our local nurseries.  There are plenty of flowering plants for your garden beds.

We’ll start with the Gaillardia Daisy or blanket flower.  The beautiful combination of orange and yellow petals reminds me of sunflowers.  The Gaillardia Daisy will grow up to 2 inches in height and can spread up to 3 feet in width.  They are sun loving so they’ll be just fine in our high summer temperatures.  For more info, check out the University of Florida IFAS Extension.

 

The Gazania Daisy or treasure flower is also a sun loving plant.  There’s yellow, white, purple and orange varieties so they’ll make wonderful color displays in your garden.    The Gazania Daisy is an annual, perfect for zones 8b-11.  Typically Gazanias are annuals, but can live 18 months or more if no freezing occurs. Another great sun-loving plant is the Penta.  If you are looking for beautiful butterflies to come to your garden, then you must plant some Pentas.  Pentas are sun loving, but will do okay in part shade.  Just remember, the more sun they get, the more blooms they’ll produce.  Pentas are perennials (in zones 8-10) so they’ll keep flowering for years to come.

Spicy Chicken Enchiladas

Have you ever tried making Chicken Enchiladas?  It may sound like a lot of work, but I think they are totally worth it.  To make the shredded chicken, I  take a couple of seasoned chicken breast in a pan with a bit of water or chicken stock.  You’ll basically boil the chicken for about 20 minutes.  Once the chicken is cooked, pull the chicken apart with the fork and you can add shredded cheese and greek yogurt to make your filling.  If you don’t like greek yogurt, you can add sour cream.  My girls can’t tell the difference between sour cream and greek yogurt :).

Once you got your filling ready, then it’s time to roll the tortillas.  Place the filled tortillas in a single layer in a glass casserole and pour your favorite salsa on top.    Cover with aluminum foil and bake in the oven at 350 for 20 minutes.  Sprinkle cheddar cheese on top and put back in the oven (without the foil) for another 5 minutes.

This time, we used our Parkesdale Farm Market Five Amigos Salsa.  Be warned, this is very hot.  We’ve always used it with chips as a snack but never cooked with it.  Oh my!  I was glad I had saved some tortillas without the salsa for the girls because it was almost too hot for us to eat.  I guess cooking the salsa made it even hotter.

I think next time, we’ll try it with the Pepper Patch Salsa instead.  The Pepper Patch Salsa is on the mild-medium side, so hopefully it won’t turn too spicy!
