Guest Post: Fatma’s Mediterranean Salad Recipe from The Watering Mouth

First I wanted to say thank you so much Xiomara and Parkesdale Farm Market for asking me to guest blog! I am so honored to be able to do this for you. I am sharing one of my all-time favorite salad recipes that I learned from a friend of mine named Fatma back when I lived in Aurillac, France a few years ago.
We both worked at an elementary school and quickly became great friends. One night, she invited me over to her apartment to have dinner with her and her two children (my students) and she prepared this amazing meal with this salad as a starter. I find it to have the perfect blend of heartiness balanced with a refreshing coolness. It has been in my repertoire ever since, and I hope you will like it as much as me!
Fatma’s Mediterranean Salad
INGREDIENTS
For the salad:
1/2 medium red onion, diced
2 English cucumbers, chopped, bite-size
8 oz feta cheese, crumbled
7 oz kalamata olives, diced
3 medium tomatoes, diced
Directions to make the salad:
Combine all ingredients into a large bowl and mix thoroughly.
For the dressing:
Dijon Mustard
Olive oil
Salt and pepper to taste
Directions for the dressing:
Put several tablespoons of mustard into a bowl. Using a wire whisk, gradually and vigorously stir the olive oil into the mustard until it has become thoroughly combined and emulsified. Adjust ratio to taste. Season to taste.
Mix the salad portions with the dressing when serving. To store, keep the salad and dressing separate so it doesn’t become too soupy (the cucumbers and tomatoes will lose water over time).

Summer Vacation July 30 – August 13, 2012

Every year the market closes for two weeks in August.  This year, summer vacation will be starting July 30 through August 13th.  We’ll reopen on August 14th.  Usually during this time, repairs and improvements are made to the market.

The most fun I’ve had at the market has been on the last day before vacation.  You’d think my favorite day would be the first day of Strawberry Shortcake.  Yes, that’s fun too, but if you’ve never been to our market on that last Sunday, then I highly recommend you stop by.  If you’ve been to our market, then you know our prices are pretty low.  On the Sunday before vacation, the prices get even lower.  As the day goes by, the prices continue to drop.  It’s just a lot of fun to keep lowering the prices.  It brings a smile to everyone because no one believes how low everything is priced.

It’s also fun because our customers always tell us how they are going to miss us.  They always say how they don’t know what they’ll do during those two weeks.  Its a great compliment to us to keep doing what we are doing and strive to do better.  So, thank you for being our loyal customers.  We couldn’t do it without you!

July Fitness

So far July has been a pretty good month for running.  This month I’ve run at least twice to now four times per week.  🙂  If you are wondering, I didn’t run the Kiwanis Midnight Race on 4th of July.  I really wanted to do the 10K and I just didn’t feel ready.

During this month, I’ve also tried to incorporate other activities like lower body and  yoga classes at our local YMCA.  You know that feeling you get after working out muscles you don’t normally?  The “I’m going to be sore tomorrow” feeling?  Yep, I was sore, and it felt good.    Last week I decided to try yoga instead.  I always forget how much I enjoy going to yoga.  After a yoga class I always feel refreshed and ready for anything.  It’s just rejuvenating.

The next event I’m looking forward to is GLOW Yoga by Lululemon on July 27th.  I’ve heard great things about the free yoga classes at Lululemon and at the Curtis Hixon Park.  So this should be fun.  Thanks to this lady, I’m signing up to do the Hooters 2 Hooters 10k on September 16th.  It seems like such a fun run starting at the Original Hooters location in Clearwater.  Having a race to look forward to is always a great way to keep me in track with my running.
